Ingredients


· 20 button mushrooms
· 1 medium onion, chopped
· 1 tomato, finely chopped
· Few sprigs of coriander leaves, finely chopped

For gravy:
· 1 medium onion, chopped
· ½ cup coconut, grated
· 4 dry red chilies, crushed
· 1tsp coriander seeds
· 5 peppercorns
· 2 cloves
· 1tsp turmeric powder
· 1tsp garam masala
· ½ marble sized ball of tamarind
· Salt to taste
· 3tbsp oil

Method
Wash mushrooms and wipe them with a clean cloth. Chop them into medium chunks and keep them aside. To make the gravy, heat oil and add onions, sautéing them until the colour changes. Add all the spices including coriander seeds, dry red chillies and cloves, and sauté for four to five more minutes.
Then, add grated coconut and sauté on low flame till it changes its colour to brown before taking it off the heat. Now add tamarind and turmeric powder to the roasted, grated coconut mixture, stir and let it cool down. Once it is done, grind the grated coconut mixture by adding a cup of water to turn it into a thin gravy, and keep it aside.
In the same pan, heat a tablespoon of oil and fry chopped onion until it changes colour. Then, add in chopped tomatoes and cook until soft. Add chopped mushrooms and cook it for about 15-20 minutes until they become soft and release water. Next, pour in the gravy and cook for another five to eight minutes. Add salt according to your taste and garnish it with chopped coriander. Serve warm with tandoori roti or naan.
